Ethiopia Yirgacheffe Grade 1 Idido is a classic example of why Ethiopian coffees are among the most sought-after in the specialty coffee world. Sourced from the small community and washing station of Idido in the Yirgacheffe region, this coffee reflects the clarity, elegance, and floral complexity that have made the area famous.

Grown by smallholder farmers cultivating traditional Ethiopian heirloom varieties, the coffee benefits from the region’s high altitude, fertile soils, and ideal climate. The result is a coffee with exceptional aromatic character and vibrant acidity.

This lot undergoes an extended washed fermentation process, part of an improved quality-focused project designed to enhance cup clarity and complexity. Carefully selected ripe cherries are first floated to remove defects before being de-pulped and fermented for 72 hours. During fermentation, fresh cold water is introduced every 24 hours to carefully control the process and preserve the coffee’s delicate floral profile.

Following fermentation, the parchment coffee is slowly dried on raised African beds for 21 days, allowing the flavours to develop gradually and evenly.

The result is a beautifully refined cup — floral, tea-like, and exceptionally clean — with notes of apricot, honeysuckle, jasmine, and bergamot that perfectly capture the character of Yirgacheffe specialty coffee.
