The San Ignacio Province sits at the top of the Cajamarca region in the San Ignacio Province in Northern Peru where the Rio Canchi splits the country from Ecuador.Here the western & eastern mountain ranges of the Andes meet to form microclimates. Much of the forest that surrounds San Ignacio is protected due to the variety of animals that reside there. This coffee is certified organic. Its a blend of Typica , Caturra, Mondo Novo and Bourbon. Coffee here is commonly fermented in wooden tanks built from fallen Romerillo trees (it is prohibited to fell them).When coffee ferments it generates heat and the wood is better at dispersing the heat evenly.
